Spicy Chicken Salad
The easiest chicken salad recipe to keep in your fridge as a backup (or first-option!) meal or snack when you don’t have much time. You also have the option to make this un-spicy if that’s more your vibe.
Add to salads, eat with crackers or dipping veggies, or on bread for an open-faced sandwich.
Spicy Chicken Salad (GF)
~ Makes 4 servings ~
Ingredients:
1 lb Shredded or pulled chicken breast
1.5-2 cups Whipped cottage cheese or plain greek yogurt (enough to bind it together)
Spices (~2-4 tsp each): Salt, pepper, garlic, onion
Sauces (~ 2-4 Tbsp each): Any of your choice, but I used the following:
Primal Kitchen Foods Chicken Dippin sauce
Trader Joe’s Peri-peri hot sauce
Springbone hot sauce (a must-have in my fridge!)
Add-ins: 2-4 cups Celery, onion, carrots, scallions
What to do:
Mix all ingredients together in a bowl except for the add-ins. Then, add your chopped veggies.
Substitutions:
Yogurt/ cottage cheese - Sub with dairy-free version
Chicken - You can also use canned salmon or tuna for a pescatarian option

3-Minute Spicy Chicken Salad
